Called “black gold”, the balsamic vinegar was born as cooked grape must used as a medicine (from the name balsamic) then spreads among peasant families the use of diluting the product with wine vinegar to be lighter that it can be used every day as a seasoning.
Conquers the Protected Designation of Origin (DOP) in the 2000 from the European Union.
In 2009 the European Union recognizes it as IGP (Protected Origin Mark) attributed to those food products with quality, reputation and particular characteristics which depend on a specific geographical area
The IGP must comply with extremely strict production rules established by the production specification and the compliance with these rules garanteed by a specific control body.
The aging period starts from 3 years when it exceeds them it’s used the denominations of “Aged Modena Vinegar” and from 25 years “Extra-Old Balsamic Vinegar”
The barrels used for aging are all in fine wood from the area of origin such as chestnut, mulberry, oak, cherry, juniper, ash and robinia.
